Apple Pecan Muffins {Gluten Free}

I’m over winter. Over it. Done. While I don’t want to rush through spring and summer, right now, in a perfect world, I’m dreaming of fall. The weather in Boston is perfect, wedding planning will be over, pumpkin spice lattes will abound; It’s simply my favorite time of year.  This week I felt like making something that, even for a bite, would take me to late September. The muffins you’re about to experience are a miracle in gluten free cooking. Super moist (as much as I hate that word, it’s the only one to do their texture justice), hearty, fruity, and – amazingly – low fat. I adapted these from a fellow Boston Blogger over at Live, Laugh, Cooking. She makes awesome food and you should check out some of her recipes.  While these weren’t gluten free, and originally used 1/3 cup of butter (which was probably unbelievably good), they took some modifications to be more in line with my current eating habits. Apple Pie Whiskey

Well, now that I’ve got your attention… This is exactly what it sounds like. Apple pie? Good. Whiskey? Good. Together? Fantastic. I was in the mood for a wintry drink and rediscovered my affinity for whiskey when I was nursing a cold a few weeks ago and, at the suggestion of friends that probably drink too much, treated it with hotty toddys.  This is simple. You need: 1 Apple 6 Cinnamon Sticks 2 Vanilla Beans 3 Cups Bourbon Whiskey 1 Quart Glass Mason Jar (or other airtight container) Slice and core your apple and throw it in the jar. Follow it up with cinnamon sticks and vanilla beans. Pour over whiskey. That’s the easy part.  Put it on the booze shelf and wait 10-15 days.  I’ve just been enjoying it chilled, with a cinnamon sugar rim to sip on (and by sip, I mean consumed in one single “sip”). Be brave, use it in your favorite whiskey cocktails.  Embrace winter. 86 proof helps.
